In this online Sicilian cannoli cooking class, you will learn how to make authentic cannoli from scratch.
We will start preparing the dough, then we will cut and wrap it on the cylinder that will be deep-fried and finally we will prepare the cream with fresh sheep ricotta.
Remember cannoli have to be filled only just before eating them!
- 2 cups / 250 g of pastry flour
- 7 tsp / 30 g of sugar
- 3 tbsp / 30 g of lard
- 1 small egg + 1 egg yolk
- 0.2 cups / 50 ml of Marsala wine
- 2 tsp / 10 ml of vinegar
- a pinch of salt
- 3/4 tsp / 2 g of cinnamon powder
- 4 cup / 1-liter peanut oil for deep fry cannoli
- 3 cup / 750 g of sheep ricotta
- 2.5 cup / 320 g of powdered sugar
- 1/4 cup dark chocolate drops
- to garnish
- Candied Orange Peel and/or
- candied cherries and/or
- chopped pistachios
- powdered sugar to sprinkle over the cannoli
- Plastic wrap
- Rolling pin or pasta machine
- 1 bowl
- cannoli cylinders
- 1 Pot to deep fry cannoli
- 1 hand mixer
- Wood or marble board
